Ukadiche Modak (Tricolor)

About the Recipe

A maharashtrian sweet delicacy, very healthy and non fried dish. A good combination of carb, protein, iron, calcium.

Ingredients

  1. Specially made high quality rice flour - (rice is washed, dried and then powdered)

  2. fresh coconut (grated)

  3. Jaggery

  4. cardamom powder

  5. nutmeg powder

  6. poppy seeds

  7. water

  8. ghee

  9. salt

Preparation

For making the stuffing -

  1. Take a thick bottom pan, add a spoon of ghee.

  2. Then add 1 spoon poppy seeds and add grated coconut and crushed jaggery.

  3. Let it cook for 10 minutes with continuous stirring.

  4. Then add cardamom and nutmeg powder and again cook for 3 minutes with continuous stirring

  5. turn off the flame and keep it for cooling at room temperature.

For making the outer covering (pari) -

  1. take a pan add 1 cup water.

  2. add pinch of salt and 1 spoon ghee to it and make it boil

  3. as soon as water starts boiling, immediately mix rice flour to it with continous stirring

  4. then keep a lid over it and turn off the flame.

  5. after 5 min apply ghee or oil to hands and kneed the dough smoothly

Actual stuffing and steaming of Modaks -

  1. divide the dough in equal medium size balls

  2. take one ball stuff the coconut stuffing and shape it like modak.

  3. after making all the modaks, take a dhokala or idali steaming pan apply oil over it or keep haldi leaves or banana leaves

  4. and keep modak gently over it and steam for 12 to 15 minutes

Tip - for making tricolor i just toook food colored water for sprinkling
